Today was all sorts of chaos. Had it all happened at an earlier time, I would have caved to chex mix, pot roast, and possibly a peanut butter Snickers. Mmmm.....snickers....*drools and day dreams*.
SO...anyway...
Today started in a mad rush. I had to teach my 5 year olds pre-school but had to do a detour and pick up another boy on the way over which made my normal 20 minute drive, a 40 minute drive. Since my breakfast was going to take 50 minutes to cook, I made sure to get up early this morning so it would be done in time. Since I was eating earlier than usual, I also went ahead and made my mid-morning juice since I figured right around pre-school snack time, I was gonna get hungry. Animal crackers and pretzels look amazingly appetizing when you're that hungry. Come to think of it, animal crackers are always pretty appetizing really. Mmmm...animal crackers...*drools and day dreams*.
So...anyway...
Of course today of all days the morning is filled with scattered downpours. In January. Cause that makes total sense. I find myself running behind, proceed to catch every red light between my house and the other boys just as they turn red, and then when I finally make it to the church where our class is held, I find myself trying to shoo 2, 5 year old boys AWAY from huge puddles (not successful at all), while the rain is torrentially coming down (we were pretty much soaked) and the wind is blowing at some crazy 40 mph (I think one of the boys was lifted off the ground a little at one point). This isn't rain, it's a flippin MONSOON. IN JANUARY. IN OHIO! I really wanted some animal crackers about then.
So we get through the first half the day with minimal incident and snack time rolls around. I'm just going to say thank GOD I thought to bring that juice. I was super hungry by 11:00 and I kid you not that massive tub of animal crackers would have been half way down my throat before I realized I'd even undid the lid. Somehow I managed to gracefully dish out snacks for all the kids before grabbing my juice and chugging. About 3 chugs in I realized how tart the stuff was due to 1 lemon + 1 lime + 2 granny smith apples. My mouth puckered so hard I think my face caved in momentarily. After that it was sips. Animal crackers are still very appetizing, fyi.
Managed to make it home and decided to make lunch before I started gnawing on unopened bags of chocolate chips, when I got a phone call from my dad that my mom was in the hospital. She had been having pains under her rib cage since 4 am and was holding out in hopes they would go away, but I guess by 1pm or so he called 911 because they had gone from really uncomfortable to pretty agonizing. They'd taken her in for an ultrasound and were heading to an ER room till the could see the results. Since the hubby wasn't home yet, I told him to keep me posted on her status and I'd try to make it over there as soon as I could.
I downed my lunch with mild relish, took stock of what I needed for my next 4 days since my produce co-op had come in, and got sporadic updates from my dad in the meantime. Ultrasound showed nothing, so they took her in for a CT scan; CT scan showed nothing, so they went for an EKG; pain was under control but she was still hurting some; blood work showing normal; etc..etc. During the course of all this I decided to make a fast run to the store, grabbed what I could, came home and ate some kale chips cause I was pretty hungry again, and at 5 headed to my parents to walk their dog who was most probably crossing his legs and whimpering with yellow tinted eyes as he stared desperately at the front door. Dinner would have to wait so I grabbed an apple just in case.
As it turns out the dog was dead asleep and despite sleeping in a chair right next to the door, had I said his name any louder when I walked in, it's possible he would have hit the ceiling. Had my 12 year old take him out for walk/run while I wandered the house and ohhhhhh the temptations; candy canes, chex mix, pot roast in a crock pot, almonds, yogurt, cookies, candies, and a darned peanut butter Snickers bar that was just DARING me to eat it. I ran away screaming like a little girl. It was necessary.
By the time we made it to the hospital, my mom called to let me know the EKG wasn't showing anything either and they had to release her. This is both troubling and relieving. It's nice to know there's no gall bladder in the midst of bursting inside her, but it's not very comforting to know that not only has she actually had these pains before, but every time they're getting worse and no one seems to know what's causing them. 
I took her home in my car since my parents car had been sitting for 5 hours and was pretty cold, and made her some juice. My mom has been wanting to do this Reboot with me ever since I told her about the show and she watched it a week + ago. However, she's on some medicine for an injured shoulder and wanted to talk to her doc first about it. I told her I think this was a sign she needed to start now and ask later. The medicines were pain management only and neither of us thought the doctor would have any problem with her beefing up on fruits and vegetables. For the record, my mom's a nurse so I tend to agree with her on these sorts of things.My dad had pot roast with veggies, my daughter made mac and cheese. I locked myself in their bathroom and bathed their dog. Desperate times, my friends. 
Soon as I could I rushed home and started my dinner at 8:30. Late dinner sure, but it only took 45 minutes to make so not too terrible bad. The problem comes when I don't read all the instructions. One would think I'd have learned this by now but noooooo, not me. The dinner took 45 minutes to bake, and then another 40 minutes of simmering on the stove. I ate last nights sweet potatoes and parsnips.

Breakfast at 8am
Apple Peach Bake (Double to make extra for Day 8)
This dish is delicious warm or cool.
4 Peaches, sliced (remove pit)
2 Apples chopped
3 Tbsp. Raisins – Figs are a great substitution
1 Tbsp. Cinnamon (or more to taste)
Spray baking dish with canola oil
Mix all ingredients in a bowl then place into oven safe baking dish and cover
Bake at 375 degrees for 45 minutes or until apples are soft
Cool and enjoy!

I think my taste buds were off or something. Maybe it was the fact that I used frozen peaches because they're not in season right now. Either way, whipped cream would have made this oh so much better...

Lemon lime to the extreme! Couldn't taste the cabbage at ALL. This was pretty good, but remember to SIP, don't GULP.

Ok, so yesterday when I made the sweet potato and parsnip thing, it had a note to save some for lunch today, but then it didn't say to have it on the menu today and I completely forgot to eat it. My lunch was half burnt yucca chips. I would be upset if not for the fact that I'm really glad I had that sweet potato meal on hand this evening when I realized soup wasn't gonna happen.

Afternoon Snack at 4pm
Kale Chips (from Day 6)

My chips from yesterday were no longer 'chips' and more 'limp lettuce'. I popped them back in to crisp up again, but the ended up just tasting kinda burnt. From now on I'm not baking and saving these. I say make 'em fresh. They don't take long to make and not too messy, so might as well.

Pear and Squash Soup (makes extra for lunch Day 8)
1 Butternut Squash
1 tablespoon Olive Oil
3 Bartlett pears, peeled and chopped
1 1/2 cups Onion, thinly sliced
2 1/3 cups water
30 ounces low-sodium Vegetable Broth (purchased or make your own – see recipe on our site)
1/2 teaspoon Celtic or Sea Salt
1/8 teaspoon Fresh Ground Black Pepper
For a kick add 1-2 teaspoons yellow curry powder and 1 teaspoon cumin
Preheat oven to 375°
Cut squash in half lengthwise and scoop out then discard seeds.
Place squash halves, flesh sides down in a baking dish with water
Bake for 45 minutes or until tender. Remove from oven and cool. Peel off skin of squash and spoon flesh into a bowl then mash.
In
a large pot or dutch oven, sauté chopped pear and onion in olive oil
for approximately 10 minutes or until lightly browned. Add squash,
water, broth, salt, pepper (add curry powder and cumin if including
these ingredients).
Bring to a boil. Partially cover pot, reduce heat, and simmer 40 minutes.
Place
approximately half of squash mixture in a blender, puree until smooth.
Pour mixture into a large bowl; repeat procedure with remaining squash
until all of it has been blended. Return squash mixture to pot.
Warm over low heat 3 minutes or until heated.
Makes 2 servings
